Pedro Caiado contacted Providence via Instagram and we’ve been touched by his sincerity, and his will to discover our beautiful region. Pedro, where do you come from? I was raised in between Lisboa and Peniche in Portugal.
What made you become a chef ? I think the fact that tasty good food as always been so present in my family, growing up to fresh fish from the market, vegetables from the garden, seafood that my older brother’s friends would catch and try to sell to my father. I always had this thing that I wanted to eat what the adults ware eating, not the steak with fries, white rice and a fried egg.Then school started not making sense, I never liked studying, one day my father asked me if I wanted to stop and I naturally took cooking as a professional path.
What are your “signature” dishes ? Hmmm I don’t think I have a “signature” dish, I am so happy to be surrounded by amazing cooks, producers, people that are into real wine that my cooking is always involving with the places I visit.
How did Providence came up on your pop up checklist? You know, I haven’t found many places where you find the combo beautiful waves to surf and good food to eat. Providence spotted my attention with that.
What’s important to you in cooking? Simple, good quality, local ingredients and happy hungry guests.
